This is my first year fully committing to growing herbs, and so far they seem to be very happy. We get so much sun on our balcony and stairs, so it has been a perfect spot for my potted babies.
I made a very tasty and simple dill pesto that we have been using in potato salad and on our spelt toast. It seems to go with just about everything, and smells so fresh.
Here is what you will need:
1 cup lightly packed fresh dill large stems removed
1 small clove garlic
1 heavy drizzle of your best olive oil
1/4 raw walnuts
1 lemon juiced
pinch of himalayan pick salt and pepper
Add everything into a food processor and pulse until everything is combined well, and the garlic and walnuts are very fine. Start with just adding in half of the lemon juice if it is very juicy. Add in more lemon juice and olive oil if necessary.
Store in a sealed jar in the fridge.
