falafels and vegan tzaztiki

By Tuesday, January 5, 2016 0 0

weather: wet and chilly what i am listening to: Ben Howard Promise Well, it's been a while. Three months to be exact. I have no excuses really, just enjoying some lazy home time and spending whatever free time I have outside which was one of my new years 'goals'. I have never been much of a resolutions kind of person but this year I decided to set a couple small personal goals. One other goal was to try cooking new foods and branch out with different spices, seeds, beans and broths. This weekend I decided on falafels and vegan tzaztiki made with sunflower ...

butternut squash soup

By Friday, October 30, 2015 0 0

weather: it is cold and wet and we are happy what i am listening to: Bahamas Sunshine Blues A batch of soup is just the thing to chase away the chill. Butternut squash soup just screams fall time. Last fall I really over did it with this soup and thought I would never eat it again, but here I am making myself a whole new batch. This butternut squash soup is so easy to make, and is such a nice meal to make for when you are having guests over. While this dish effortlessly cooks and creates a soothing fall time cozy dinner smell, ...

three summer nights

By Tuesday, September 29, 2015 4 2

There is no better way to close out the summer than with lovingly prepared meals to share the story of how it all came together, the people who made it happen, and memories we will hold onto forever. We started the summer off with a trip to the Okanagon with some of our best friends for some fun in the sun, wine tours and relaxing stary nights. Logan and I had been planning this trip for a couple months, keeping our surprise elopement to ourselves. While on our wine tour through beautiful Osoyoos and Oliver we stopped at Hester Creek for ...

curried lentil stew

By Tuesday, June 16, 2015 1 0

weather: nothing but sunshine what i am listening to: Vance Joy Georgia Lentils have always been my go to legume that I easily add into most of my meals. At one point I was actually eating them for breakfast, lunch and dinner, which naturally made me feel a bit heavy so I completely gave them up a couple months ago to see if it would help with the bloating and heaviness, and I have to admit it did. Although I think a lot had to do with how much of the little guys I was eating in a day and also what I ...

spring highlights

By Wednesday, May 20, 2015 1 0

Spring has been in the air for a while now, with the cherry blossom trees starting in February and the days lasting well into the evening. Growing up in Ontario my favorite season was always fall because of the beautiful colors and crisp air. Since moving west, this spring time weather is taking a close second. It is always so exciting to see all the local produce start to pop up again and after eating root veggies all winter long, I perk up at the sight of baby greens, radishes, carrots and asparagus. This spring has also been a time ...

dill pesto

By Tuesday, May 12, 2015 0 0

weather: overcast what i am listening to: In For The Kill Billie Marten This is my first year fully committing to growing herbs, and so far they seem to be very happy. We  get so much sun on our balcony and stairs, so it has been a perfect spot for my potted babies. I made a very tasty and simple dill pesto that we have been using in potato salad and on our spelt toast. It seems to go with just about everything, and smells so fresh.     Here is what you will need: 1 cup lightly packed fresh dill large stems removed 1 small clove garlic 1 heavy drizzle ...

mushroom gravy

By Monday, May 4, 2015 0 0

weather: sunny beach weather what i am listening to: I Feel It All Feist I have been craving potatoes like crazy lately, so I decided to jazz them up a bit with this mushroom gravy. Now I'm craving the gravy non stop. It smells so good while it's cooking and seems to go with pretty much every meal. I have been putting it over rice, veggies, using it in stews and it works great in little pot pies. Here is what you will need: 2 1/4 cups low-sodium vegetable broth divided 1 cup white onion chopped 8 ounces mushrooms, such as porcini, cremini or shiitake trimmed & chopped 4 cloves garlic minced 1 ...
